Executive Chef Chris Jackson appeared on KDKA-TV's Pittsburgh Today Live for the SECOND TIME in just two weeks. After hearing about his fantastic rooftop garden, KDKA-TV producers asked Chef Chris to come back and talk about it and demonstrate to viewers at home how they can use their garden veggies and herbs to make great dishes.
Alongside host Brenda Waters, Chef prepared his famous gazpacho and garden basil pesto, both containing ingredients from his rooftop garden, including heirloom tomatoes, Sikkim cucumbers, lemon basil, California wonder peppers, and more.
The gazpacho can also be used as gazpacho "shooters" garnished with shrimp and jalapeno peppers to spice up any party. And, Chef's garden basil pesto is a perfect tossing for any pasta such as homemade gnocchi and linguini. Chef also uses the pesto for a tasty chicken salad (SEE ATTACHED RECIPE).
