Executive Chef Chris Jackson appeared on KDKA-TV's
Pittsburgh Today Live this morning preparing his Day-Boat Scallop Seviche and Avocado Mash. After featuring clips from new romantic comedy, No Reservations, weather anchor and station announcer Jon Burnett interviewed Chris about his career as a chef, watched him prepare the dish, and, of course, sampled the finished product.
Chef Chris prepared the scallops "seviche" style, a South American tradition in which seafood is prepared in a centuries old method of cooking by contact with the acidic juice of citrus juice instead of heat. He also prepared a delicious Avocado Mash as a side with a garnish of fresh plaintain chips fried and baked to perfection with a sprinkle of salt and lime zest. Ingredients for both scallops and mash came from Chef’s rooftop garden, including the jalapenos, cilantro, heirloom tomatoes, and fresh microgreens.
The rooftop garden was planted early this Spring and has blossomed into a beautiful greenery of Bibb lettuces, heirloom tomatoes, peppers, black squashes, and a variety of melons, including White Crenshaw. All of the above will be used for house-made items like our salsa, sausages, vegetable ragouts, BLTs, and more. Recipes for both scallops, avocado mash, plaintains, and, as a bonus to this special summer dish, a refreshing Watermelon Cinnamon Fresca drink are attached.
